(General Manager) A native of Michigan, Mike got his start working for the Kruse & Emir restaurants. After working on the resort community of Mackinac Island, he made his way to Colorado ten years ago.
As the Executive Chef at restaurants at both Keystone & Copper, he is most proud of the teams he built there. Named as Colorado Ski Country USA's Food & Beverage Professional of the Year in 2022, he made the move to Mi Casa to challenge himself outside of the kitchen and lead this Summit institution into the next 40 years.
In his off time, Mike enjoys all that Colorado has to offer, hunting, fishing, and skiing.
(Assistant Manager & Special Events Coordinator) Erin has been part of the Mi Casa administrative team since 2018, but recently made the move to a more active role in the front of house.
She moved to Breck from the midwest fifteen years ago, and she's been obsessed with Mi Casa's queso ever since. She loves the positive, fun team the works with, and helping people plan their perfect party!
If she isn't working, you'll find her outside kayaking, snowboarding, or hiking & camping with her husband and two pups.
(Director of Culinary Operations) Bruce joined the Mi Casa team in 1992 after moving from the East coast. He has a passion for sharing regional Mexican cuisine prepared from scratch. He learned and studied under Chefs like Diana Kennedy, Rick Bayless and Zarela Martine in both Mexico and the Culinary Institute of America. Bruce is always looking to learn more about time honored traditions in Mexican cuisine and how to apply those techniques in modern ways.
(Assistant Manager) Being born and raised in Salida, Colorado has always had a special place in Katie’s heart. She grew to love Mexican Cuisine at an early age being surrounded by family that had a passion for green chile festivals and Mexican culture. Starting in the restaurant world as a young teenager, she has a huge passion for the restaurant business, great food, and of course margaritas! Katie loves cooking and enjoying the outdoors in her spare time.
(Assistant Manager) Originally from the Philippines, RJ started in the service industry at a very young age. She grew up helping out at her aunt’s beach resort doing banquet events and later pursued a bachelor's degree in Hospitality Management. She continued her passion by becoming a college instructor for Food and Beverage, Tourism, and Hotel and Restaurant Management.
With her love for new experiences, food, and travel, she got an opportunity to come to the United States to learn more, and now she has become a part of Mi Casa crew. She says being in a Mexican restaurant reminds her so much of her Filipino roots that she feels like she's in a home away from home!
